Are you suffering from Gluten Intolerance? Well, you are not alone, according to the Celiac Treatment and research center, it affects approximately 18 million people.

Gluten is a protein that is primarily found in grains such as Barley, Wheat, Rye and Triticale. Some people suffer mild Gluten sensitivity but others suffer with Celiac Disease that stems from a complete Gluten Intolerance. Celiac Disease actually damages the villi in the Duodenum part of the Small Intestines causing severe Inflammation and an obstruction of absorption of essential nutrients often leading to a wide range of deficiencies that ignite a domino effect of symptoms within the body.

In our modern day society, we are exposed to a copious amount of processed and packaged foods that contain Gluten loaded ingredients. This includes Pasta, Cereals, Gravies, Cakes, French Fries, Breads, Chips, Imitation meat, Salad Dressing, soup bases, Beer and many food additives. Cross contamination can also occur if a non Gluten food is exposed to Gluten via kitchen utensils such as chopping boards, toasters or cutlery. Unfortunately Gluten is also used as a binding agent in many medications and nutritional supplements.

Wheat products to avoid would include Semolina, Bulgur, Durum flour, Spelt and Kamut choosing safer grains such as Amaranth, Flax, Millet, Quinoa, Tapioca, Buckwheat and arrowroot.

If you suspect that you are Gluten sensitive then try eliminated all Gluten products from your diet for a period of 30 days and then slowly reintroducing certain Gluten products to assess the severity of symptoms and level of sensitivity. If you decide to become Gluten free then it’s a good idea to supplement your diet with additional fiber, Iron, Folate, Thiamin and Riboflavin as these are often provided by our intake of grains. Becoming Gluten free can be a life changing experience for people who have suffered with Gastrointestinal problems for decades.
